The Queen of Steaks when it comes to flavour and tenderness! You won't find this cut at the grocery store, it is coveted by restaurateurs!

It takes a little care to cook, but well worth the results. Picanha is a cut of beef taken from the top of the rump. It is know by many names in many countries, rump cover, rump cap, top sirloin cap or a culotte steak.

It is located right near the Tri-Tip and is part of the sirloin, hidden beneath the hip bone, giving this underused muscle some extra blood flow, resulting in extra flavour!
